You are comparing apples to oranges. With wheat, the human body cannot deal with it due to a biological inability. With peanuts, a few people are allergic, due to an overreaction of an intact biological mechanism.

Deep-fried ice cream isn't bad for you due to any kind of "allergic reaction" - it's just not a healthy thing to eat. Same with refined carbs.

Humans are not meant to get the majority of their calories from cereal grains, period. It goes against millions and millions of years of evolution.
Every society that transitioned to agriculture went through long stretches where their health suffered. People became smaller/shorter/more sickly, more fighting broke out...it's often the point at which we see human sacrificing start as well (in some examples at last).
There's nothing wrong with wheat for most people, in moderation. But it's not something our bodies are meant to take that much of our calories from...same with corn. Have you ever seen what undomesticated corn looks like?
